Video: Ethnic Foods Heat Up Expo Floor

As the buying power of Latino and Asian consumers expands, hotter spices, different textures and grains are becoming more common in the supermarket. It is estimated that between 2012 and 2017 sales of ethnic foods in stores will grow more than 20%. Several exhibitors at the 2013 IFT Food Expo showcased ethnic prototypes. Food Technology magazine’s Senior Digital Editor, Kelly Hensel, explores Bell Flavors & Fragrances’ Peruvian cuisine and Innova Flavors’ Puerto Rican dishes.
